A good carbonara sauce is a delicacy for many, but what do you do if you have some left over?
Can you freeze carbonara? You can freeze carbonara, but most of the taste and consistency will be lost. Carbonara will keep for around 1 to 2 months in the freezer, but the longer it is kept, the greater the loss of quality.

Can you freeze carbonara?
Carbonara is not particularly suitable for freezing and is best eaten on the same day. However, it can also be frozen if necessary.
Carbonara consists mainly of raw egg, bacon and Parmesan cheese.
According to the BZfE (Federal Center for Nutrition), both raw eggs and cheese can be frozen and kept frozen for 2 to 4 months.
Cream, which is sometimes contained in carbonara, can also be frozen. Bacon, on the other hand, is rather unsuitable for freezing.
However, the real problem lies in the fact that for a good carbonara, the egg is not brought to a standstill in order to achieve a creamy consistency. If the desired consistency was achieved during the original preparation, it will no longer be the same after defrosting and reheating.
Can you freeze spaghetti carbonara?
You can freeze spaghetti and carbonara sauce together, but the pasta will become mushy. Homemade, fresh pasta in particular loses its consistency when frozen together with the sauce. It is better to freeze the pasta and sauce separately or cook new pasta at the desired time.
How long can carbonara be kept frozen?
Both carbonara sauce and spaghetti carbonara should be kept frozen for a maximum of 2 months. To ensure this shelf life, the sauce must be vacuum-packed in an airtight container. Freezer bags are best for this.
Can you freeze carbonara a second time?
Once carbonara has been defrosted, it should never be frozen a second time. It should also not be kept in the fridge for longer than 24 hours, as it contains raw eggs and there is a risk of salmonella. It is also always important to use very fresh eggs when preparing carbonara.

How do you freeze carbonara?
To preserve the quality as much as possible and avoid freezer burn, you must seal the freezer containers as airtight as possible. You can either use a storage box suitable for the freezer or freezer bags.
1. leave the sauce to cool
To avoid overloading the freezer, warm food must always cool down first before freezing. Empty the carbonara sauce into a separate container so that it cools down more quickly and leave it at room temperature for a maximum of 30 minutes.
2. divide them into portions
It makes sense to divide frozen food into smaller portions, because once defrosted, the carbonara should not be frozen a second time. If you are using storage boxes, you should also make sure that the sauce is filled to a maximum of 2 centimetres below the edge of the lid so that the sauce has room to expand.
3. remove air from the container
The best possible quality is achieved if the sauce is vacuum-sealed, i.e. there is no air contact. This is why freezer bags are best for carbonara, as you can squeeze out almost all the air, whereas tins have some air left in them to prevent them from bursting.
4. label the expiration date with a waterproof pen
Even frozen products do not keep forever. As carbonara contains raw egg, you need to keep a close eye on the expiration date. Therefore, label the can or freezer bag with a waterproof pen so that the expiration date is not blurred. It is better to freeze carbonara for one, but not more than two months.
5. freeze the sauce
Place the container in the freezer to freeze.

How can you defrost carbonara?
Two methods can be used to defrost the carbonara:
- Overnight in the refrigerator (gentle method)
- In the microwave (quick method)
No matter how you reheat it, the quality will suffer at the latest when you heat it up, which is why carbonara is best served fresh.
Defrost carbonara in the fridge (gentle method)
A gentle way to defrost carbonara or spaghetti carbonara is to leave it in the fridge overnight for 5 to 10 hours. The sauce can then be heated in the microwave, in a pan or in the oven and served with pasta.
Defrosting carbonara in the microwave (quick method)
You can also defrost carbonara in the microwave by pouring the sauce (with or without pasta) into a microwave-safe container and defrosting it for 10 to 20 minutes at 180 watts. The sauce must be stirred in between so that the heat is distributed.
