Store the Bolognese: How to preserve the taste

Bolognese is easy to prepare in large quantities, so there is often some left over.

Depending on how you store it, it will keep for different lengths of time.

Bolognese should not be left uncovered for more than an hour after cooking. It usually keeps for 2 to 3 days in the fridge and can be kept frozen for up to 3 months. Alternatively, Bolognese can be boiled down and stored for 9 months.

To ensure that it is edible, it must be stored correctly. In the following sections, I will show you how to store Bolognese correctly.

Storing classic Bolognese correctly: how to keep it for a long time

Bolognese can be stored in four different ways:

  • uncooled
  • cooled
  • deep-frozen
  • boiled down

For each method, there are a few tips that need to be followed to get the best quality.

Minced meat is susceptible to microorganisms due to its large surface area. It must therefore be stored in a cool place throughout and processed quickly.

Keep the Bolognese at room temperature (one hour)

Bolognese should not be left unrefrigerated for longer than an hour, as bacteria can develop more quickly over time. Bolognese with minced meat is particularly susceptible to microorganisms and should therefore be refrigerated quickly.

Store bolognese at room temperature – here’s how

  1. Cover the Bolognese sauce almost completely so that it can still cool down
  2. Store away from direct light
  3. Refrigerate or freeze as soon as possible, preferably after a maximum of one hour

Store the Bolognese in the fridge (2 days)

Bolognese sauce with minced meat can easily be kept in the fridge for 2 days if stored properly. To do this, leave it to cool and pour it into an airtight storage box. As it contains minced meat, keep the sauce in the coolest place, on the lowest glass shelf above the vegetable drawer.

Storing Bolognese sauce in the fridge – here’s how

  1. Leave the Bolognese sauce to cool for a maximum of one hour
  2. Pour into an airtight storage box
  3. Store on the bottom glass shelf above the vegetable compartment
  4. The optimum refrigerator temperature is 5 to 7 °C

Can you still eat Bolognese after 4 days?

Store the Bolognese in the freezer (3 months)

Bolognese with minced meat will keep for around 3 months if stored properly in the freezer. To do this, allow it to cool and fill it into a freezer container or freezer bag. The sauce must be stored in an airtight container and preferably vacuum-sealed. It must be used after 3 months

How to freeze Bolognese sauce

  1. Leave the Bolognese to cool for a maximum of 1 hour.
  2. Empty the Bolognese into a storage box suitable for freezing, leaving at least 2 centimeters of air between the lid and the sauce.
  3. Alternatively, empty into a freezer bag and squeeze out the air thoroughly.
  4. Note the expiration date with a waterproof pen.
  5. Freeze the Bolognese sauce and keep frozen for a maximum of 3 months.

Can you still freeze Bolognese after 2 days?

If the Bolognese has been kept properly chilled, it can still be frozen after 2 days. The sauce can then be kept in the freezer for 3 months and must be used immediately after defrosting.

Can you freeze Bolognese a second time?

Bolognese with minced meat should not be frozen a second time. Each time it is defrosted, the taste of the sauce suffers and the risk of bacterial infestation increases.

Cooking bolognese: prepare large quantities in advance (9 months)

Bolognese can be cooked in jars and stored in the dark for up to 9 months without refrigeration. To do this, pour the sauce into perfectly clean jars immediately after cooking and boil for around 75 minutes at 100 °C.

  1. Pour the cooked bolognese hot into perfectly clean jars.
  2. Place the sealed jars in a preserving pot and add hot water up to three quarters of the height of the jar.
  3. Reduce the Bolognese to 100 °C for 75 minutes.
  4. Store the cooked bolognese in a dark place in the cellar and consume within 9 months.

Can you freeze cooked bolognese?

You should not freeze cooked bolognese, as the jars are full and could crack. However, even without refrigeration, the cooked sauce will keep for up to 9 months without any problems.

What is the shelf life of pasta with Bolognese?

Did you already know? The dish spaghetti Bolognese does not exist in Italy. Bolognese is traditionally paired with tagliatelle or, in the north of Italy, with tortellini or lasagne.

In general, pasta has a longer shelf life than Bolognese, so you can keep it for the same length of time without any problems. Only the consistency of the pasta is slightly lost when stored together.

Pasta with Bolognese should not be left at room temperature for longer than 2 hours. It can easily be kept refrigerated for 2 days and spaghetti Bolognese will keep for around 3 months in the freezer.

However, it is best to store the pasta and sauce separately. After a few hours, the pasta becomes mushy and loses quality.

What is the shelf life of vegetarian Bolognese sauce?

Vegetarian or vegan bolognese usually contains tofu or lentils instead of minced meat. Both keep longer than minced meat when cooked.

Vegetarian Bolognese should not be kept unrefrigerated for longer than 2 hours. It can easily be kept in the fridge for 3 to 4 days and frozen for around 6 months. Alternatively, vegetarian Bolognese can also be cooked in jars and used within 9 months.

How can you recognize bad Bolognese?

Before you use stored Bolognese, you should always check it for edibility first. To do this, you can carry out the following steps in sequence:

  • Check for mold. Take a close look at the Bolognese. Is there any mold? If you suspect mold, dispose of the entire sauce.
  • Smell it. Bad Bolognese smells sour and funny. At the slightest suspicion, dispose of the sauce as a precaution.
  • Remember how long the Bolognese has been stored for. Bolognese with meat should only be kept in the fridge for a few days and in the freezer for a maximum of 3 months. If this period has been significantly exceeded, you will unfortunately have to dispose of the sauce.
  • Try a small piece. If everything seems fine up to this point, try a small amount and judge the taste. Does the sauce taste unusual? Spoiled meat will have a slightly sour taste. If there is no suspicion, you can still eat the sauce without hesitation.
