About the recipe

Tagliatelle with prosciutto, butter and Parmesan is a classic Italian pasta dish that comes from Italy’s rich culinary tradition. The homemade tagliatelle, a wide ribbon pasta, is served with thin slices of prosciutto, a type of air-dried ham, as well as plenty of butter and freshly grated Parmesan cheese.

The taste of the dish is rich and full-bodied. The salty sweetness of the prosciutto harmonizes perfectly with the creamy butter and tangy Parmesan cheese, creating a delicious and satisfying combination. The pasta is tender and coated with a light butter sauce that enhances the flavor of the prosciutto and Parmesan.

Melt the butter over a low heat 1 and sauté the Parma ham for a few minutes 2 until it is golden brown and crispy. I put two or three pieces aside for garnishing. 3.

Cook the fresh tagliatelle in plenty of salted water for about 2 minutes 4 and then add to the pan with the Parma ham and mix thoroughly. 5 Add the Parmesan and mix in thoroughly. 6

Empty a small ladle of pasta water into the pan 7 and mix again thoroughly so that the cheese and butter fat melt into a sauce. 8 Serve on a nice plate, garnish with prosciutto and sprinkle with Parmesan. 9
